OUR JAPANESE DISHES
Okonomiyaki (お好み焼き) literally means “grilled as you like it.” It originated before World War II but became widely popular afterward, when flour was affordable and could be combined with nearly any ingredient. There are two main styles: Osaka-style, where everything is mixed into a batter, and Hiroshima-style, which layers the ingredients, often adding yakisoba noodles. It’s a beloved street food dish, but in our kitchen, we prepare it with technique and care—just like in a Namba izakaya.
Karaage (唐揚げ) is Japanese fried chicken that originally came from China centuries ago but evolved over time into a symbol of Japanese comfort food. You’ll find it in bento boxes, izakayas, and festivals. In our kitchen, we marinate it for hours and fry it to order, ensuring it’s crispy on the outside and juicy on the inside.
